Fried Chicken Serundeng Recipe

Ingredients:
  • 1 whole small chicken, cut into 4 parts
  • 350 ml coconut milk

Mashed Seasonings:
  • 3 cloves garlic
  • 5 red onions
  • ¾ tsp coriander
  • 1 teaspoon salt
  • ¾ brown sugar
  • 2 cm turmeric
  • 2 eggs pecans, toasted
  • 2 bay leaves
  • 2 stalks lemongrass, crushed
  • Oil for frying

Serundeng :
  • 4 red onions, puree
  • 2 cloves garlic, crushed
  • ¼ tsp cumin, crushed
  • 4 cm galangal, smashed
  • 2 bay leaves
  • 1 stalk lemongrass, crushed
  • 1 tablespoon granulated sugar
  • Salt to taste
  • 250 grams of coconut, grated lengthwise
  • 2 tsp tamarind water

Directions :
  1. Mix the chicken with coconut milk, spice paste, bay leaves and lemon grass until cooked. Lift. Fry chicken until golden brown. Set aside.
  2. Heat a little oil fry the remaining chicken. Saute onion, garlic and cumin mashed. Add bay leaves, lemongrass, sugar and salt. Enter the grated coconut and tamarind water.
  3. Serundeng: heat oil, sauté ground spices, bay leaves, lemon grass until fragrant, add sugar and salt. Mix well.
  4. Enter the fried chicken into it. Stir over low heat until the coconut is dry and brown. Lift.
